Encounter the Iberico pig in its natural habitat in Southwest Spain - in open ranges of oak filled groves where this unique race to the Iberian peninsula is fed solely, and naturally, on acorns in the field. This peculiar breed of pigs, famous for their black hooves ("pata negra") as well as their black skin and hair, are descendants of the Mediterranean wild boar. Their unique characteristics of breed and breeding, and more importantly the natural climatic and agricultural conditions of this Mediterranean forest, result in the "caviar" of cured hams - Jamon Iberico - a standard in all Spanish tapas bars and becoming known worldwide in gourmet stores and upscale restaurants. It is considered the best ham in the world!!
Wonderful Seville will be the starting point of this route. From there you will go along the Southern part of what the Romans called la Ruta de la Plata or Silver Route, the Roman road which went across the Western part of Spain.
From Seville to the mountainous region of the Sierra de Aracena (home to the so called Jamon de Jabugo - named after the village of Jabugo), you will visit a private ranch and the most prestigious Iberico ham producer's facilities in Spain. We will continue north along the famous Roman Silver Route, visiting other historic towns and villages of this incredible region of Extremadura considered by many Europeans as the last natural paradise in Europe.
Our gastronomic journey will end at the mythic Cordova. A proper mixture of cities, villages, and countryside will give you an in-depth introduction to the rich and historic cultures of the areas as well as to their culinary legacy.
