Staying in charming converted farm buildings near a medieval village, we make the most of the wonderful late summer tomatoes of Tuscany: cooking them slow, cooking them fast, making them into soups and sauces, using them in salads and stews, serving them filled or on pasta, as appetizers or as side dishes, on their own or with other ingredients.
