November in the land of Under the Tuscan Sun, near splendid hill top Cortona. This cooking week takes place in a beautiful huge stone country house at a very special time of year: the Olive Harvest. Tuscans eagerly await the arrival of the new season olive oil, and on this class we cook extensively with it.

Tour Itinerary:

Day 1: Arrival after 4 pm, to give you time to settle in and to explore the house and the grounds. Carmelita will offer you a Welcome Aperitivo followed by a Welcome Dinner. Over dinner, as we get to know each other, she will start to tell you about what to look for in a good Olive Oil, what Extravirgin means and why it is not a good enough definition of a good oil, what makes Olive Oil especially nutritious and beneficial, how to taste it... and much more! Day 2: First cooking class at 10 am, making both a light lunch and tonight's dinner. And first guided olive oil tasting! All the dishes we cook on this week are chosen to empahsise and exalt the flavour of the new olive oil. (B) / (L) / (D)

Day 3: We go together in your cars to visit an olive oil mill, to see and understand the processes involved. Light lunch out in Cortona. Our second cooking class starts at 4 pm, making dinner. (B) / (D)

Day 4: Today is free for your independent sight seeing - you may want to visit wineries or cheese makers and Carmelita can help you organise a visit to one or more of these if you like. She will be waiting with your Tuscan supper at 7.30 pm. (B) / (D)

Day 5: Two classes today, with an afternoon break between them. A pasta sampling at lunchtime, when we make and taste 3 or 4 different pasta sauces, and a proper 3 course meal (no pasta!)for dinner. (B) / (L) / (D)

Day 6: A free morning for shopping in Cortona or for any sightseeing you want to fit in. We meet at 3pm to start preparations for our 5 course Tuscan Olive Oil Celebration, tonight's Festive Farewell Dinner. Lunch will be served at 1 pm for those who request it. (B) / (L) / (D)

Day 7: Time to fill out the feedback forms, take final photos and say goodbye. Farewells and departure by 9.30 am. (B)
