Read's Cookery School school is perfect for those who are passionate about cooking, and enjoy joining in with some culinary fun with a Michelin-starred chef. The class provides an inside look at the highly original Mediterranean cuisine of acclaimed chef Marc Fosh and offers an opportunity for “hands on” cooking and an informative tutorial. His emphasis is on bringing out the true taste of a food, the precision of preparation, and, most importantly, having a complete respect for the food itself.
The course focuses on Spanish and Mediterranean influences, and includes innovative dishes ranging from sea bass with wild garlic and almond sauce to caramelized pineapple and ginger lasagna with a coconut sorbet and a white pepper-toffee sauce. Students are encouraged to be as subtle or adventurous as they like, and rather than insisting that recipes should be followed 100%, Marc deliberately encourages creativity, suggesting only that cooks should adhere to a comparable composition of flavors.
Their courses also include wine and olive oil tastings, plus regional cheeses and Spanish hams. We never forget that you are here also to have a good time, so we make sure a relaxed atmosphere is always present throughout, whether in or out of the kitchen.
About the Chef:
Marc Fosh is the Michelin-starred chef/director at Read's hotel and restaurant, Santa Maria, Mallorca, Spain. Now rated by the experts as one of the best restaurants in Europe. Marc, a fluent Spanish speaker, has a background in Michelin-starred restaurants in both the U.K. and France before moving to San Sebastian, the heart of Spanish gastronomy in the Basque country and eventually settling in Mallorca. His style is unique and incorporates many individual interpretations and combinations of ingredients to create stunning depths of flavour and presentation.
His approach to cooking is modern yet simple with clear, clean tastes drawing on Spanish and Mediterranean influences. Marc Fosh is an inspirational chef committed to purity, balance and texture, his cappuccino of lobster and coconut with caviar has been described by the London Evening Standard as "sex on a plate" and many famous names have been themselves to taste the great food coming from his kitchen. He has appeared many times on television and writes regular food columns for newspapers and magazines both in the U.K and Spain.

Buffet style Breakfast in the restaurant. Hands on cookery class with Marc Fosh: Basic sauces, dressings, marinades and cooking with fresh herbs. Light lunch. Day 3: Santa Maria, Mallorca Island - Visit To The Market Of Palma
Buffet style Breakfast in the restaurant. A Visit to Palma's largest fresh produce market where. Marc will share a few tips on what to look for when buying meat, fish and vegetables. Light Tapas lunch back at the hotel. Cookery class: Simple, elegant recipes ideal for entertaining.
