| With 30,000 cattle spending the summer on
high pastures, cheese is a speciality of theBregenzerwald and the subject of its celebrated KaseStrasse or Cheese Road. The KaseStrasse is an initiative typical of the area’s self-sufficiency. Anxious, in the face of globalisation, to preserve a rural economy where most farmers have no more than a dozen cows, farmers, dairies and restaurateurs got together
to promote the local cheeses. The Cheese Road is not a trail as such but a concept running from alpine meadow to the table. |
