While there is much fresh fish and seafood, the local cuisine of the South reflects the influence of the Malay immigrants who first populated these shores bringing many of the exotic vegetables, spices, and herbs that make up the basis of Thai cuisine.
David’s love of Thailand began some twenty years ago with an accidental visit to this remarkable country. He began to document the traditional recipes and culinary techniques handed down through the generations. During the tour we will use these recipes cooking them in beguiling locations. David arrived in London two years ago from the renowned Darley Street Thai restaurant in Sydney and is now based at his Michelin starred restaurant Nahm at the Halkin Hotel.
We will start the tour in Bangkok and visit the food markets teeming with exotic ingredients, visit Ayuttaha and see the rice paddies. Cook dishes such as fish braised with sugar cane, a spicy tamarind relish with white turmeric and red curry of minced chicken with ginger.
We then fly North to Chiang Mai, where we will prepare a meal for monks acknowledging Buddhism’s special place in Thai culture. We will use the Four seasons new cookery school and cook and sample the rugged jungle food of this mountainous region – venison stir fried with basil, catfish deep fried with garlic and peppercorns and spicy curries with aubergines and wild ginger. And if you fancy rafting down one of the mighty northern rivers or riding on elephants there will be options to do these of visit the National park of Doi Inthanan.
Moving south we will visit Koh Samui, not the touristy part but the quieter Southern tip. We’ll fish from a boat for tropical fish and squid, crab and lobster, grilling the catch and eating it with chili and lime sauce on one of the sparkling beaches.
Classes will take place in the shaded cookery course kitchen which has been especially designed for us and will involve hands on cooking and presentation of Thai food, along with talks and demonstrations on various special ingredients used to make this fresh, delicious and healthy cuisine. Included in the week will be a visit to the local tropical fruit, vegetable and fish market of Nathon and lunch in a traditional Thai restaurant.
We will ensure that you will return having a better understanding of the mysteries of Thai cooking and able to create wonderful and exotic dishes at home.
Faculty Information:
David Thompson will be hosting, guiding and teaching for the 10 days. We are adding to our week in Koh Samui an optional three day trip to Bangkok. We have put together a special tour of the spectacular food markets, and the best restaurants, silk, jewellery, cutlery, Thai handicraft and furniture shops. You will be staying at the five star Peninsula Hotel, where each room has a wonderful view overlooking Bangkok and the river.

You will have the chance to prepare and taste such traditional Thai dishes as: Gai Tom Ka; Tod Man Khao Pod; Tod Man Pla Gung; Kang Kheaw Wan Kung; Yum Nua; Phad Thai; Laad Na; Khao Niaw Ma Muang; Gluai Tod.
Facility Information:
Our chosen location Laem Set Inn is situated on the southern tip of the island away from the tourists. The combination of wooden Thai bungalows, air conditioned rooms and suites amongst the palm trees creates a small tropical village atmosphere. Each one has its own balcony and view of the sea. The whole place has a wonderfully relaxed atmosphere and is a perfect place to dive and snorkel on the beautiful coral reef, sunbathe and swim, or explore the local islands by boat.
