Chef John Wilson's Cooking Holidays in Europe include Carentan, Normandy, France; Greve-in Chianti, Tuscany Italy; St. Remy de Provence, France and Barcelona, Spain. As well as Gourmet Getaways in Asheville, North Carolina, USA, Dubois, WY, USA, and hands on cooking classes taught in Historic Roswell, GA, USA.
The small, ancient town of St. Remy de Provence located south of Avignon is the charming and tranquil setting for our school. The view from the covered terrace looks out onto the spectacular Alpilles mountain range. Mas Bellevue, is a lovely house with five bedrooms and three and a half bathrooms.
Your day begins with continental breakfast followed by morning cooking classes in which students will prepare lunch, with instruction by Chef Wilson. Alight evening meal will follow your afternoon excursions.
* Excursions in Provence, France: Highlights of the excursions you’ll enjoy include a visit to one of Chef John’s all time favorite wineries called Chateau Romanin in St Remy. After touring the estate, you will sample their wines in the tasting room which is beautifully decorated with velvet draperies and crystal chandelier.
On Wednesday morning, the group will shop at the outdoor market in St. Remy to explore the bounty of fresh produce, fabrics, oils, artisans and other treasures for you to discover. You’ll also have free time to browse in the town’s quaint shops. Lunch is on your own in town.
During the week students will learn about olive oil, its production and taste its unique flavor. Finally, you’ll explore Les Baux de Provence, the fascinating white rock plateau town which was originally settled as far back as the Bronze Age. This village, whose ruins attract visitors from all over the world, is now vibrant with shopping, restaurants and museums.
* Cooking in Europe - Normandy, France: La Porte Rouge, an 18th century farmhouse in the charming town of Carentan located in the province of Normandy, will be your home for this five-day adventure. Four buildings comprise the estate which encloses a private hedged courtyard in the back. The front of the house opens onto an expansive lawn dotted with fruit trees, blackberry bushes, and wild growing herbs which are used by the students in recipe preparation. This makes a perfect setting for a relaxing picnic after returning from the local market.
Your cooking holidays begins Sunday afternoon, kicking off a memorable and fun-filled week. Students enjoy a relaxed schedule of daily cooking classes, culinary excursions and free time to explore on your own. You'll learn to cook regional favorites based on seasonal ingredients. The programs are appropriate for all skill levels, however, students should have a basic knowledge of kitchen skills. Ending the week on Friday after lunch.
We have designed a cooking holiday with you in mind. An All Inclusive Package: 5 nights fine accommodations, 6 participatory cooking classes, all meals (with the exception of one lunch) with wines, culinary excursions with transportation and all transfers. You stay with Chef John and experience the French way of life first hand.
Faculty Information:
John Wilson, owner of the company, is a certified chef and graduate of the Culinary Institute of America in Hyde Park, N.Y. Chef Wilson has appeared in Atlanta on local news magazine shows including: Noonday Atlanta, Good Morning Atlanta, Good Day Atlanta, and CNN Healthwatch.

- Excursions in Normandy, France: In addition to daily cooking instructions, the course includes tours of local food purveyors including: the local open air market, the Cidrerie Herout where award-winning apple brandies are produced, and a goat cheese farm where you can pet the friendly goats and taste fresh chevre. Other items on your itinerary include a visit to the historic site of Omaha Beach where American troops descended on its shores during the W.W.II Normandy Invasion; and Villedieu les poeles, home of the largest production of copper pots in the world.
Also on the itinerary is Le Mont St. Michel, a Benedictine monastery perched on a tiny island, surrounded by shops and private residences. This phenomenal architectural wonder was constructed without interruption from the year 1,000 to the beginning of the 16th century.

Facility Information:
The farmhouse features six bedrooms and three modernized bathrooms, however its rustic flavor remains complete with hardwood floors, antique furnishings, and floral down comforters. Classroom instruction is held in a large kitchen, accommodating groups of up to 10 students.
