MEXICAN HOME COOKING SCHOOL
Is almost unique in Mexico; in that it is owned and run by a Mexican, teaching “traditional Mexican cuisine” from its basics.

Señora Estela Salas Silva began a classical culinary apprenticeship at the age of seven under the tutelage of her grandmother and the women of her family, according to the traditions of Mexico that still existed at that time. Her experience in restaurants began at age 9 in Mexico City and continued to San Francisco, where she was Head Chef of her family’s “El Rebozo Restaurant” for many years. She has owned and operated M05493 since 1996.

Estela is assisted by her husband Jon who worked for many years in the catering business in San Francisco.

CASA CARMELITA RETREAT
Offers writing workshops on various themes throughout the year led by Andrea Steffens a long time friend of Señora Estela. The groups are very small and intimate utilizing the salons, gardens and accommodations of the Salas Silva Home.

A gourmet culinary course that is far beyond what is usually understood to be Mexican food, combined with luxury stay in a Mexican country home.

1. How long has the business been operating and how did it start?

Estela opened M05493 in 1996. The women in Estela’s family for generations prior to her time worked as cooks for the well-to-do residents of Puebla. Estela began a classical culinary apprenticeship at the age of seven in the traditions of Mexico that still existed at that time under the tutelage of her great-grandmother, grandmother and the older women of her family. After working in various restaurants in Mexico Estela left and spent 20 years as head chef at her family’s restaurant in San Francisco (Mill Valley), returning here to open her school.

2. What is your company's mission?

Estela's dream was and is to pass on not only the traditional cuisine of Puebla, which is being lost, but also the distinct and unique dishes developed by her family while cooking for the privileged class in Puebla.

4. Who is the founder or owner of the company and briefly describe his/her past activities?

Estela is the founder of M05493. Her course is unique and due to its small size she is able to format her classes to the level of her students, allowing her to present her course to novices as well as professionals. She has had students from 13 to 83 years old. Her students now come from as far away as New Zealand, Switzerland, Sweden, Japan, Spain, The Netherlands, Germany, Korea, South America, United States and Canada. Caterers, Professional and private chefs have come from New York City, Manila, Philippines, St. John, Virgin Islands to Estela to consult on menus and widen their repertoire in as well as to open new Mexican restaurants using her recipes in Soul, Korea and Cambridge, England. Estela will be appearing on the Cooking Channel and Food Network Canada with Chuck Hughes, "Iron Chef" winner and host on "Chuck's day off".

5. What is your most popular travel package and why?

My 7 day six night culinary package passes on dishes and traditions that have been kept alive in my family far beyond what is usually understood to be Mexican food. M05493 is almost unique in Mexico; in that it is owned and run by a Mexican, teaching "traditional" cuisine from its basics for those who are interested in very small "hands on" classes, combined with luxury stay in a Mexican country home. I format each course to the level of expertise of the student. You don’t need to be an advanced cook to learn this cuisine. Unlike an impersonal resort or hotel, we are available to respond to individual needs and as much as possible we structure our classes to the interests of our students.

6. What is the best compliment you received from a client?

We recently returned from a week at M05493 near Tlaxcala. We have attended several other cooking schools in Mexico, all of which have been enjoyable and instructive. However, the M05493 experience really stands out in our minds in two respects. First, the experience of being guests in a lovely mexican home with truely gracious hosts is unique. Second, the quality of instruction is exceptional. I have been a university teacher all of my adult life and like to think I know something about good teaching. Estela and Jon, who run M05493, have worked out a team teaching approach that would be the envy of any university laboratory instructor. A Wonderful Vacation – Exactly as Advertised
Pickup at the Mexico City airport was flawless and we had five great days at the hacienda. We stayed in the ... view more Casita which was like having our own little house. Breakfast at 9 and cooking from about 10 until 12:30. Lunch at 1 pm with the afternoon available to explore the area. We made about 30 dishes – ranging from the relatively simple like arroz rojo to the complex like mole poblano with 20 ingredients; all following Estela’s grandmother’s recipes. One day we went to the City of Puebla to shop for Talavera pottery. Another day we went to the Cacaxtla/Xochitecatl archeological site to view murals painted by the Mayans about 2000 years ago. A third day we went to the local town of Tlaxcala to see the carnival parade along with at least 50,000 residents lining the streets. The weather was perfect – highs in the 70s and lows in the mid-40s every day. We had a fire in our fireplace every morning and evening to take the chill away. In response to everyone’s question – we felt safe 100% of the time in this part of Mexico. A perfect getaway from the snow and cold at home.

The Mexican Cooking Vacation was a wonderful experience all around, and is highly recommended if you're looking for something "off the beaten ... view more path." The accommodations were rustic but very cozy and nice. The cooking experience was similar to my experience in many US cooking classes-- hands-on work involved a lot of chopping, mixing, some dough rolling, and tamale filling, with much of the actual cooking being performed by Estela while we all looked on. Classes were taught in serviceable English. A different breakfast was served every day (with fantastic coffee), and the food we prepared got progressively better as the week went on, and they gauged the spice tolerance of our group. Apart from the school, our group visited a couple of archeological sites and some pottery shops, and while I missed a lot of the nuance at the sites due to my limited Spanish capabilities, they were breathtaking nonetheless. I found the whole trip to be an incredible experience, and would heartily recommend it to those looking to experience interior Mexico.

Estela and Jon are outstanding teachers. Along with sharing their knowledge of Mexican cuisine, they shared cultural and philosophical perspectives on life and living. We learned new words, new cooking tips, and fresh viewpoints. The days flew by, filled with laughter and learning.

We stayed in La Casita—truly a charming and comfortable “home-away-from-home”. Casa Carmelita’s location isn’t in town (part of its charm), but Jon is an expert at arranging transportation for trips to surrounding sites and cities. His chauffeurs are punctual, courteous, careful drivers. We would recommend the Mexican Home Cooking School to anyone who wants to learn traditional Mexican cooking in a relaxed, enjoyable setting.

What a great vacation. We started each day with an excellent breakfast, learned to cook many excellent dishes, enjoyed the fruits of our labor at lunch time and ... view more then had the afternoons free to lounge around or go on day trips to the nearby towns, mountains or ancient ruins (I don\'t recommend the hot springs excursion!). Then in the evening relax with a drink or two as you enjoy more items you cooked earlier in the day for dinner.

The hosts are friendly, knowledgeable and flexible. I would definitely go back here again. If you\'re considering going here and have questions feel free to contact me.
