Two cooking days with visits to the market and delicatessen shops . Learn how to make great tapas and prepare a three-course Andalusian meal with your chef Ruth Roberts who has more than twenty years experience as a professional in Spain. Six nights in one of Sevilla's most charming hotels. Transport to and from Sevilla's airport, bus or train station.

Three full day excursions related to great sherry, superb ham and fine olive oil taking you to the sherry country, the Sierra of Aracena and the Sierra of Grazalema. Tapas tour of some of Sevilla's finest bars. Introductory and farewell dinners in two of Sevilla's best restaurants.

Your Itinerary:

Day 1: Sevilla. Arrival in Sevilla, the heat of Andalucia. Evening meal with tour guide. Overnight in Sevilla. Includes: (D).

Day 2: Sevilla - Zahara - Grazalema – Sevilla

Breakfast. Departure from Sevilla. Drive to Zahara De La Sierra, which is situated about 100 kilometres (63 miles) southeast of Sevilla. Here you visit olive oil mill which dates from 1755. After being shown around the mill and having the traditional oil-making process explained there will be an an olive oil tasting. After the visit we will go on to see the town of Zahara. Then we continue on to another beautiful white village called Grazalema. In Grazalema we will eat at one of the best restaurants in the area sampling fine local food including local cheese, soups, charcuturie, lamb, wild boar etc. There will be time to look around the town before heading back to Sevilla. Return to Sevilla. You are free for the rest of the day. Overnight in Sevilla. Includes: (B), (L).

Day 3: Sevilla - 1st Cooking Class In Sevilla And Tapa Night On The Town

Breakfast. Cookery day (9:30 - 16:00). Your teacher will collect you from the hotel and take you first to one of the local markets to buy the ingredients for the dishes you are going to prepare. Today's cookery course will be focused on preparing a number of typical tapas, the small plates of food served in bars all over Spain. After preparing the food, in which everyone gets to participate, lunch is taken on the terrace which offers spectacular views of the cathedral and Giralda. Free afternoon followed by evening tapas tour starting at 8:30. We will be taking you to four of the best bars in Seville to give you a further taste of what Seville can offer and build on what you learned in the cookery class. Overnight in Sevilla. Includes: (B), (L), (D).

Day 4: Sevilla - Jabugo - Aracena – Sevilla

Breakfast. Departure from Sevilla. Drive to Sierra Of Aracena, which is situated about 90 kilometers (56 miles) from Sevilla. We will first visit a farm to see how the pigs are reared and then go on to see the installations of one of the best ham producers in the village of Jabugo, a mythical name in Spain for fine ham. An expert will show us around, explaining the processes involved in the production of ham and of other products which come from the Iberian pig. At the end of the visit you will be able to taste the wonderful ham along with a glass of the best fino. Afterward, we will go on to the town of Aracena where we will have a gourmet lunch at the finest restaurant in the area. We will sample the finest local produce including fresh cheese, ham, mushrooms, pork from the Iberian pig, wild asparagus, artichokes etc. Many of the dishes will vary according to the season. The meal will be accompanied by fine Spanish red wine and end with typical desserts. You are free for the rest of the day. Overnight in Sevilla. Includes: (B), (L).

Day 5: Option 1: Sevilla - Jerez De La Frontera – Sevilla

Breakfast. Departure from Sevilla. Drive to Jerez De La Frontera, which is about 85 kilometers (53 miles) from Seville and is a beautiful town steeped in history. Prior to reaching the town we will be stopping to visit the vineyards of one of the bodegas (wineries). An expert will explain all the factors affecting grape production and quality, and will show us around the vines and vineyard installations. These installations are nearly always perched on top of a hill and afford panoramic views of the surrounding countryside. Following this we will proceed to the bodega where we will be taken around what are spectacular buildings with their rows and rows of sherry butts stacked one on top of the other. These buildings are often compared to cathedrals and it is certainly true that they give the impression of being sanctified places.

After a detailed tour including a complete explanation of the sherry-making process, there will be a tutored tasting of the different styles of wine which includes high end wines not normally tasted. The tasting will be carried out by an expert.After the bodega visit, we will be going to one of the best restaurants in Jerez to enjoy a meal consisting of excellent local dishes accompanied by fine sherry wines. After this tour we hope that you will agree with most of the world's top wine critics who believe that sherry is the most underrated fine wine in the world. Return to Sevilla. On arrival back in Sevilla you will be free for the evening. Overnight in Sevilla.

Option 2: Sevilla - Jerez De La Frontera – Sevilla

Breakfast. Departure from Sevilla. We take you to Sanlúcar de Barrameda, the second most important sherry town, unknown to the majority of foreign visitors. It is a similar distance from Seville as Jerez and is a beautiful place at the mouth of the Guadalquivir estuary. It looks across to the Doñana National Park and out on to the Atlantic Ocean Among the many styles of sherry wine produced here manzanilla stands out as a style of sherry made in a similar way to fino but lighter with a salty hint to it. The town is also known for very fine seafood; it is one of the best places for this in Spain. The excursion follows a similar pattern as that to Jerez , visiting a vineyard before proceeding to the bodega where, after an extended tour, there will be a tutored tasting. After the bodega visit we will go to one of the fantastic seafood restaurant along the bank of the estuary where we will indulge in langoustines, shellfish, fine fried fish, sea food and rice stews etc., all washed down with the finest manzanilla. Return to Sevilla. On arrival back in Sevilla you will be free for the evening. Overnight in Sevilla. Includes: (B), (L).

Day 6: Sevilla - 2nd Cooking Class In Sevilla

Breakfast. Cookery day (9:30 - 16:00) with the same routine as Tuesday. Today you will be preparing a typical 3-course Andalusian meal. The afternoon will be free followed by farewell evening meal. Overnight in Sevilla. Includes: (B), (L), (D).

Day 7: Sevilla. Breakfast. Farewell with transport arranged to airport, bus or train station. Includes: (B).
