The course focuses on Spanish and Mediterranean influences, and includes innovative dishes ranging from sea bass with wild garlic and almond sauce to caramelized pineapple and ginger lasagna with a coconut sorbet and a white pepper-toffee sauce. Students are encouraged to be as subtle or adventurous as they like, and rather than insisting that recipes should be followed 100%, Marc deliberately encourages creativity, suggesting only that cooks should adhere to a comparable composition of flavors. Their courses also include wine and olive oil tastings, plus regional cheeses and Spanish hams. We never forget that you are here also to have a good time, so we make sure a relaxed atmosphere is always present throughout, whether in or out of the kitchen.
