Day 1: Chiang Mai - Maekok River. An early start, 6.00am, to join a morning stroll through the local fresh produce markets of Chiang Mai. Your guide will provide information on Thai food ingredients and their preparation. Return to your hotel for breakfast. Depart at 9.00am for the Maekok River Village Resort with visits to Chiang Dao Caves, a Palong Hilltribe village and a forest temple along the way. Lunch will be served at a local restaurant with arrival into the Maekok River Village Resort in the late afternoon.

Day 2: Maekok River. After breakfast start the first of your Krua Maekok cooking course modules. Today you will be given a demonstration on the preparation of various ingredients before a "hands on" session where you will prepare two dishes. Buffet lunch will include your own "Thai creation" from the morning lesson. After lunch you will visit a Royal Agricultural Project and a Lahu Shaleh Village with its own museum. Return to Maekok River Village Resort for dinner. Accommodation: Maekok River Village Resort. Includes: (B), (L), (D).
Day 3: Maekok River - Chiang Rai. Today you continue with your education in Thai food preparation with phase two of the Krua Maekok cooking course. Again you will prepare several dishes which will be included in the lunch buffet. After lunch you board a long tail boat for three hour excursion down river to Chiang Rai. During the journey you will stop at a Shan Village and a Karen Village where you will climb atop an elephant for a one hour ride through the jungle and surrounding farmlands. Arrival at Chiang Rai will be late afternoon. Transfer to the airport for your onward flight or to your hotel in Chiang Rai. Includes: (B), (L).
