Enjoy personalized culinary instruction in the world's richest food environment, where everything from luscious tropical fruits to the freshest seafood from two coasts lies at your doorstep. The School utilizes the fresh ingredients of local Costa Rica agriculture and its own organic vegetable gardens and fruit orchards for instruction.

The style of Mediterranean cuisine, emphasizing fresh vegetables, legumes, nuts, bread, and olive oil forms the basis of Tropical Creole cookery. Facilities include a spacious teaching kitchen with a wood-fired oven, organic vegetable gardens and fruit tree orchards, private nature preserve with trails, and luxurious guest rooms.

All-inclusive vacations include from two to eight persons. These multi-day programs will suit the needs of everyone from curious novice cooks to food professionals seeking advanced instruction.

Tour Itinerary:

Day 1: Arrive at Hotel Hacienda Cerro Coyote (airport pickup can be arranged). Orientation to the hotel, nature preserve, and teaching kitchen. Introduction to tropical ingredients and a tour of local coffee fincas. Gourmet candlelight dinner overlooking the twinkling light of Puntarenas and the Pacific Ocean. (D)

Day 2: Typical Tico breakfast. Discussion of Creole cuisine in the kitchen. Hands-on culinary instruction in the preparation of lunch. Lunch. Field trip to San Jose's Mercado Central or the San Ramon farmer's market. Candlelight dinner. (B) (L) (D)

Day 3: Breakfast. Tropical seafood preparations. Lunch. Afternoon free or optional field trip. Hands-on preparation of dinner. Dinner (B) (L) (D).
