The course program offers a wide choice of day, evening and demonstration courses run by our Cookery School chef Robert Taylor, winner of the esteemed Chaine de Rotisseurs Chef.
DAY COURSES: The program for day courses at Swinton Park covers a wide range of techniques and styles of cooking. The recipes for each day have a theme, and a wide range of complementary dishes are prepared.
DEMONSTRATION COURSES: These are shorter courses than the Day Course, offering guests the opportunity to watch a two hour demonstration followed by a three course meal served at the demonstration table. The courses are very relaxed, with guests encouraged to ask Robert for advice or suggestions throughout, and recipes are available to take home. There is a choice of styles of food for the courses which varies according to the season and ingredients available.
CURRY CLUB: This is a Friday night event at Swinton Park, and one which offers a truly unique way to unwind and relax at the end of the week. Join Prett Tejura from Curry Cuisine for an informative and entertaining series of Curry Club nights running throughout the year.
CHRISTMAS COURSES: Be one step ahead of the crowd with this novel and stress free approach to Christmas Dinner. Join Gilly Robinson for an afternoon of cooking and prepare the entire meal for six, all of which can be taken away and frozen to be served at a later stage at your convenience. Be the one to enjoy Christmas this year to the full! Additional servings can be prepared (advance booking required).
CHILDREN'S COURSES: the courses are taught by Gilly Robinson and are aimed at encouraging children to master the basics and encourage them to enjoy and experiment with food, in a friendly and fun environment. Two age groups are catered for, 6-11 yr olds and 12+ yr olds. Each group will spend the morning cooking and then enjoy the lunch that they have prepared in the demonstration kitchen, the children will take home with them an apron and recipe card to try out at home.

Robert Taylor: the Cookery School Head Chef and was awarded UK Chef of the Year in 2008 by the Chaine de Rotisseurs. He trained under Simon Crannage in our award winning restaurant, and is Rosemary's assistant chef during all of her courses. Robert runs all our day courses and all the demonstration courses.
Rosemary Shrager: our Residential and Celebrity Chef with her popular two-day courses offering a choice of Modern British, Mediterranean Food and Fish and Seafood themes. Rosemary opened Swinton Park's Cookery School in 2001 and she is also the resident chef on the Alan Titchmarsh Show every week and has been for the past two and a half years. Rosemary is also a chef on This Morning and she was the mentor of the winning team of Taste the Nation in early 2009, and has continued to make two seasons of Ladette for an Australian tv network channel 9 in '08 & '09, as well as an American edition. Rosemary has been fronting National Baking Week for the past 2 years.
Gilly Robinson: Rosemary Shrager's assistant during her courses and, as a working mother and a Girl Guide Leader, she has always championed nutritious wholesome family food. Her Children’s Cookery Courses also inspire children to enjoy and experiment with cooking themselves. She also runs the popular Christmas-in-a-Box afternoon courses.
Prett Tejura: is the brains behind the highly successful Curry Cuisine spice label, and now also runs our Friday night Curry Club. With her roots in India, she draws on influences from different ingredients and styles of food throughout Asia.
Chris Bax: leading the Wild about Food course at Swinton ParkChris Bax is the instructor on our Wild About Food day courses, and also our Back to Nature foraging and survival skills courses for private groups. Chris trained as a chef, before venturing into wild food. As recently seen on BBC’s Countryfile, Chris is passionate about living from the land and preserving rural skills.
The castle hotel has a very busy programme of events for hotel guests and non-residents at Swinton Park. These include lunchtime events such as Garden, Falconry Display and Wine Appreciation Lunches, the chef's table dinners, Alfresco Food Festivals, art exhibitions and spa taster treatment days.
The demonstration kitchen and dining room both overlook the castle turret and parkland, with offices, a shop, toilets and preparation kitchen to the rear. The cookery school has its own entrance and is a very short walk across the drive from the hotel. The south facing lawn has outdoor seating, and there is adjacent car parking.
