Learn to create a wide range of dishes from one of the most intriguing cuisines of the world, in a relaxing environment where you will meet others who share your passion for food and for life. During this residential cooking course, you will be introduced to different preparations of rice, vegetable dishes, the use of coconut in food and the preparation of a Keralan festive lunch or dinner (known as a 'Sadya')
The course will be held in a traditional family home, set in the grounds of a working bio-organic spice garden. All of the recipes of the food prepared during the classes will be provided alongside, will also help you to make detailed flow charts outlining the cooking processes. The level will be basic Keralan vegetarian cooking with a special focus on the vegetables and ingredients available in other countries.
Our Keralan Cooking Adventure isn't just about being in the kitchen. You will also explore the spirit of the region and its people, with a range of captivating excursions that will be inspiring and relaxing. This is an exclusive course that will give you hands-on experience and so is limited to a maximum of eight people. The duration of the course will be eight days and seven nights.

Seven day Kerala cooking adventure
This starts on every Sunday
First day -Arrival -familiarise yourself with your cottage and the tropical forest garden around. Enjoy a tuk tuk tour of the
region.
Second day: Cooking basics and demonstrations- after breakfast learn about the regional evolution of Kerala cuisine,
the spices and utensils used and convenient contemporary adaptations. In the afternoon, there will be cooking class and
dinner in the evening.
Third day: Enjoy a walk through the region and say hello to the spices and plants, grow in the region and visit a pineapple
market. In the afternoon, there will be cooking class and dinner in the evening .In between you can explore the region or
walk to the river for a swim in summer time (December to May)
Fourth day: Visit an elephant training centre, handloom cotton weaving centre and also possible to visit temples and
churches if you like it. In the afternoon, there will be cooking class and dinner in the evening.
Fifth day: A day out to see the Keralan Hills and Tea growing area. Do tea shopping and also visit a natural dyeing and
hand made paper unit.
Sixth day: Visit to local snack, chip, masala and curry powder making units. .
In the afternoon, there will be cooking class and dinner.
Seventh day: Question and answer session, review of progress. In the afternoon, there will be cooking class and dinner.
Eighth day: Breakfast and farewell.
Other Activities:
The following activities are available between the classes:
- Guided tour of a working organic eco-farm;
- Introduction to the plants, herbs, vegetables and spices used in the cooking classes;
- The utensils used in Keralan cooking;
- The regional evolution of Keralan cuisine;
- Ayurvedic massage at a traditional Ayurvedic treatment center;
- Tour of an Ayurvedic medicine factory;
- Visit to an Elephant Training Center, where you will be invited to help give the elephants their morning bath in the River Periyar;
- Visits to an old temple and a church;
- Visit to a snack making center;
- Visit to a spice making factory;
- Visit to Keralan truck building, wood carving and painting artisan workshops.
Facility Information:
Cooking courses are conducted in a rural spice garden in Kerala, which is also easily accessible by air, railway or road. The kitchen is airy and well lit and convenient to be in. The accommodation is also ensuring creature comforts.
There is a relaxing communal area and library where guests can find books on cookery, Ayurvedic medicine, meditation and a range of international bestseller novels.
