The cookery school was formed in 1989 when Paulette Murray purchased part of the well renowned "Winkfield Place" cookery and finishing school near Windsor. We have developed the business to offer several activities for keen cooks and those wishing to learn the techniques of fine cuisine.
As we now celebrate the 15th anniversary of the Cookery School, we are pleased to introduce our Autumn/Winter and Spring/Summer Demonstration and Masterclass programs. We hope you will take advantage of our “3 for the price of 2” Anniversary Offer when booking either Demonstrations or Masterclasses.
Day Demonstrations: a full day of cookery demonstrations with coffee, 3 course lunch with a glass of wine and afternoon tea and tasting the 7 dishes cooked during the demonstration.
Masterclasses
A "hands-on" practical cookery day preparing a 3 course dinner party for 4 to take away. It includes coffee, 2 course lunch with glass of wine and afternoon tea.
The Cookery Certificate Course
The 4-Week Cookery Certificate Course is an intensive Course, Monday to Friday offering a full range of culinary techniques, methods and skills. The course content is regularly updated to reflect latest trends yet provides a grounding in traditional culinary methods. It is designed for those wishing to work in The Directors Dining Room, catering for Ski Chalet guests, Shooting Lodge parties, working on Holiday Yachts, Outside Catering etc., to update skills and for the keen cook wishing to gain a large repertoire.
Kitchen hygiene & management, knife skills and techniques, stocks, the use of leaf gelatin, food preparation, garnishes, menu presentation and table etiquette will be included. A variety of tempting recipes, stimulating ideas and menus for entertaining and many useful cooks' hints and tips will be acquired. The Course is structured in weekly modules and if space is available it may be possible to book separate weeks. Those completing the 4 week course and who pass the final written examination will be awarded a Certificate. Each day starts at 10.15 a. m. finishing at approximately 4.00 p.m. ( Friday 1.00 p.m.).
A two course menu will be prepared during the morning session. This will be served and presented to be eaten by the students at lunch time. During the course some dishes will be prepared specifically to take home and on Friday morning one dish will be prepared to take home for the weekend. Aprons, cooks knives, and all necessary equipment will be provided by the School for use during the course and each student will be supplied with typed recipes and any relevant information in a file. Our Cookery Shop will be open during the course offering a wide choice of cookery utensils, knives and equipment.
Chalet Chef Courses
These new 5-day courses are designed specifically for those who wish to gain the skills and knowledge necessary for working in ski chalets and include practical cookery training, cake making, time and menu planning, safety and hygiene, and budgetary control. These represent excellent value and feedback confirms that many students have made good use of their certificates in obtaining valuable “lifestyle” employment.
Our "Chalet Chef" course has been designed in collaboration with major Ski Holiday Companies and is specifically suitable for those wishing to gain the skills required for employment in ski or summer chalets. The course does not assume any previous cookery knowledge or experience and is designed to cover the essential requirements to enable students to provide good quality cuisine for small groups.
Students prepare, cook, present and eat a Three Course Lunch each day. They each prepare a cake or pate in the afternoon to take home. With our knowledge of the ski companies' requirements our course includes the following:
- Practical tuition of cookery techniques.
- Preparing under tuition a range of attractive recipes.
- Budgetary Control (often the responsibility of the chalet chef).
- How to deal with problems that may arise.
- Safety and Hygiene.
- Menu Planning & Time Planning.
- Food Presentation Skills and Garnishes
- A File of Recipes and useful information for chalet hosts.
Students may sit the Basic Health & Hygiene Certificate, at an adult education center near their home. Students who complete the course and meet the required standards receive a Chalet Chef Certificate and a list of recommended ski chalet operators.
The course is non-residential and costs £395.00 per person inclusive of all ingredients and equipment. We can offer B & B accommodation at Glenbervie House at £25 per night and are able to provide a list of B & B accommodation available locally. Payment of the £100 non-refundable deposit will reserve you a place on one of these courses, the balance is due 6 weeks before the course start date.
Faculty Information:
Cooking classes are held by highly qualified teachers. Our chiefs will teach you about kitchen hygiene & management, knife skills and techniques, stocks, the use of leaf gelatin, food preparation, garnishes, menu presentation and table etiquette will be included. A variety of tempting recipes, stimulating ideas and menus for entertaining and many useful cooks' hints and tips will be acquired.
Other Activities:
The Murray School of Cookery also offers one week cookery holidays to the Dordogne in June and Sicily in September.
Facility Information:
All courses and Day Events are held at "Glenbervie House", a delightful country house situated 5 miles from Farnham and 40 miles from London. All courses include coffee, lunch and tea. Ground floor access but with some steps - so suitable for disabled depending on level of disability.
