Learn the inside secrets of authentic and innovative Mexican, New Mexican and Southwestern Cookery from Jane Butel and her staff amidst the beauty and charm of New Mexico. We are widely recognized as the best full-participation cooking school in the U.S. for Southwestern and Mexican cooking and techniques.

Jane Butel is the foremost authority on Southwestern cuisine. She shares her knowledge of the history and the cuisine as a teacher, television personality and author of 18 cookbooks. This site highlights a variety of opportunities to learn more about the Southwestern lifestyle while visiting New Mexico or even from the comfort of your own home.

The Cooking School is site-based in Corrales and Santa Fe, New Mexico. We offer full-participation weekend and week-long classes, demonstration classes, group classes, and team building.

Our new Satellite Cooking School is located in the award-winning La Hacienda restaurant in the Fairmont Scottsdale Princess Resort in Scottsdale, AZ. The Fairmont Scottsdale Princess Resort is home to one of the best spas in North America, three award-winning restaurants and two 18-hole Championship Golf Courses. Our Cooking School has received rave reviews from the culinary press, including being rated one of the 10 best hotel cooking schools in the world by Gayot hotel rating service.

Faculty Information:
All classes are full-participation and are taught by Jane Butel.

Other Activities:
Conduct culinary tours to Oaxaca and the Colonial Cities in Mexico annually, as well as culinary and wine tours to Spain.

Facility Information:
Weekend classes are held in Jane's own kitchen in Corrales. Week-long classes are held at The Source, a design center in Santa Fe, and include accommodations (based on double occupancy) in casitas managed by The El Dorado Hotel in Santa Fe.
