The culinary schools Program Includes:

With Chef Peppe Buffa you will learn many Italian recipes explore the delicacies of Sicilian cooking during 4 lessons, and we will visit the Medieval Town of Erice, the Greek temple sites of Selinunte and Segesta, a visit to a typical fish market "Auction" and the noisy interaction of the sellers and buyers.
The course
The course consists of 5 practical cooking lessons starting with a lesson on the basic ingredients of Italian cuisine: fresh pasta, extra virgin olive oil, herbs, spices, wines, meats and fish. The course is based on learning "Instinctive Cooking" with the use of fresh herbs and the freshest ingredients. The Italian recipes selected are surprisingly easy to prepare, at the same time of great effect and taste.
All dishes prepared will also be tasted during the class, you will be able to practice cooking many of the dishes. The Pasta Class and the risotto Class are all hands-on. You will learn a number of classical antipasti, salads, pastas, main dishes with fish and meat, desserts that you will be able to reproduce at home, plus more adventurous Italian gourmet dishes that will surprise family and friends!
The program will include a lectures on Italian wines and a wine tasting in the vineyard. At the end of the course each participant will receive a Certificate of Attendance, a chef hat, personalized apron and all the recipes in English. Classes
Lesson 1 - The Basics Class:
Starts with an insight into the main ingredients of the Italian cuisine, familiarizing with the quality, aromas and tastes of the main ingredients of the Italian cuisine.
Lesson 2 - The Fish Class:
This very important class starts with a visit to the central market, a beautiful market with vegetables, herbs, fruit, salami and lots of fish!
Lesson 3 - The Pasta and Pizza Class:
We will make all kinds of fresh pasta, white, green and black pasta, tagliatelle, ravioli, bread, focaccia and pizza… Also some interesting pasta sauces etc…
Lesson 4 - The Carpaccio and Meat Class and Soups:
How to prepare carpaccio dishes both fish, meat and vegetables as well as soups.
Lesson 5 - The Risotto Class! and scaloppine… and desserts!
The final cooking class with risottos and veal scaloppine and 3 delicious desserts!
Faculty Information:
Chef Paolo Monti worked his way up the Culinary and Hotel industry ladder passing through several countries in Europe, U.S.A. and the Middle East and the USA. During his career he has launched and managed several restaurants and catering operations in several countries.
Other Activities:
Wine tasting activities, excursions to the most beautiful regions and cities of Italy: Palermo, Sicily, Tuscany etc.
