Our culinary workshops in Italy delve into the regional cuisines. You will come home with some wonderful inspiration and greater confidence in the kitchen. The focus is intent on using quality ingredients. To this end we visit artisan producers of foods and apply those products in traditional preparations. Below you find information about the workshops and about our holiday rentals at Poggio Etrusco in Tuscany.

We invite you to immerse yourself in the culture of Italy’s traditional regional foods and wines. We learn from the Italian masters, under the direction of Pamela Sheldon Johns, a cookbook author with thirteen published books, specializing in Italian cuisine. Pamela has been running culinary workshops in Italy for ten years.

- Week long workshops: Our week-long courses include a variety of culinary experiences, from hands-on cooking classes to dinners in private homes. We explore the back roads of several regions (Tuscany, Emilia-Romagna, Piemonte, and Campania) depending on the season, our students may climb into ancient attics to taste 100-year-old balsamic vinegar in Modena; dig for truffles in Alba; or pick olives and taste their freshly pressed oil in Tuscany. We also have a new Family Cooking week in Tuscany.

Each week long program includes accommodations at Poggio Etrusco (in Tuscany), or four-star hotels in other regions, all meals and beverages, cooking classes, tastings, tours, and ground transportation. Prices per person, double occupancy, includes accommodations, ground transportation, all meals, classes, and visits: Emilia-Romagna and Tuscany programs; and Piemonte and Campania.

- One-Day Classes: If you are staying at Poggio Etrusco (Montepulciano, Tuscany), or will be in the area, it is possible to book a culinary workshop for a small group. You can choose from the topics below (when available), or request your own subject to focus on. The price, Euro 175/person, includes the lesson (with printed recipes in English), lunch and wine. There is a 2 person minimum.

Faculty Information:
Pamela Sheldon Johns lives in Tuscany and has coordinated culinary workshops in Italy for over 12 years. She is the author of thirteen cookbooks: Italian Food Artisans, Parmigiano!, Pasta!, Gelato!, Pizza Napoletana!, Balsamico!, Prosciutto, Pancetta, & Salame, Holiday Hearts, Festive Picnics, Healthy Gourmet, Williams Sonoma Risotto, Williams Sonoma Vegetarian, and Williams Sonoma Italian.

Other Activities:
Poggio Etrusco is also a Bed & Breakfast, available for vacations. On 15 acres, this property is an active oliveto with 1250 olive trees. We have a garden to pick our fresh, seasonal produce from, and jams and preserves from our plum, fig, apricot, peach, and cherry trees.

The three neighboring farms provide us with organic fruit, wine, and pecorino cheese. The views are breath-taking from every angle. In the distance we can see the charming hilltown of Cortona and Lago Trasimeno; nearby we see the ancient towers of the historic towns of Montepulciano and Chianciano Terme.

Facility Information:
For the courses in Tuscany, accommodations at Pamela Sheldon Johns' farm, Poggio Etrusco (in the province of Siena). Accommodations in other regions are in four-star hotels. Classes are held in farmhouse kitchens, trattorias, and restaurants. There is a balanced mix of cooking classes, artisan visits, and cultural experiences.
