Faculty Information:
June Forkner-Dunn, PhD, has been guiding groups to Europe since 1978, specializing in tours to France, Italy and Spain. She has taught classes on wine at the University of London & at the American Embassy in Paris. June currently teaches classes in the San Francisco Bay Area. A member of the Society of Wine Educators for 20 years, June has published numerous articles on wine.
She has a Diploma for proficiency in Italian Wines, a Certificate of Merit on French Wines from Le Comite National Des Vins de France, and has attended the German Wine Academy. She is a member of the American Institute of Wine and Food, has studied at the Cordon Bleu in Paris, as well as participated in numerous other international cooking programs.
Toby Dunn, MBA, also a member of the Society of Wine Educators and the American Institute of Wine and Food, is an avid wine collector and a lover of wine. He has visited Burgundy, Bordeaux, the Rhone, Champagne, Alsace, the Rioja, Ribera del Duero, along with the vineyards of Piedmont, Tuscany, Lombardy, Friuli-Venezia Giulia, Southern Italy, Greece, Chile & Argentina. Toby has attended the Cordon Bleu in Paris, in addition to a variety of cooking classes on cuisines from around the globe.

For those who want to chill-out, the Ritz offers a stupendous glassed-in roof-top spa to do exactly that. If you want to sightsee, consider the the Plaza de Armas (Santiago’s colonial epicenter), the Museum of Pre-Columbian Art in the former Royal Custom’s House, or the many fountain-filled parks adorning the city.
Facility Information:
Culinary walking-tour of one of Santiago’s historical neighborhoods led by an expatriate chef. We’ll visit the district’s farmer’s markets, taste native fruits & freshly baked breads - all in the mist of turn-of-the century buildings, eclectic European architecture, winding cobble-stoned streets & colorfully painted buildings. After the tour we will return to the chef’s home for a lunch of Chilean tapas.
Cooking class by the chef at Familia Zuccardi winery featuring the best emapanadas we’ve tasted in South America, followed by a tasting of the estate’s 3 different olive oils. Next, a traditional Argentinian lunch will follow with free-range chickens grilled over grapevines, just baked breads from the outdoor wood-fired oven & luscious salads from the winery’s organic garden.
