Languedoc-Roussillon is a region rich in culinary influences: Moorish and Catalan, Provençal and Italian, Gascon and Perigord. We are inspired by these, by the great cookery writers Pru Leith, Jane Grigson, Marcella Kazan and Elizabeth David - and by contemporary cooks like Sophie Grigson, Nigella Lawson and Jamie Oliver.
We bring many years of experience and knowledge of nutrition to our cooking - having started the first whole food shop and bakery in southern Ireland in the late 70's. We can cook with confidence for vegan, vegetarian and coeliac tastes - many of our favorite eastern mediterranean dishes fit the bill perfectly.
Please note: courses run from Saturday to Friday.
Faculty Information:
Over the past ten years Karen started doing cooking classes that were a great success and were an opportunity for people to learn the secrets of the cuisine of Lettercollum House. The classes included vegetarian cooking, fish cooking, bread and pizza making, desserts, Thai cooking, Indian cooking, Mediterranean, Italian and French.
Other Activities:
You may come mainly for the art courses (yoga or walking) - but we know from the compliments at the time (and the praise in emails later) that one of the highlights of the holiday has been the food and the conviviality around the table.
Facility Information:
In our real Maghrebi tajine dishes with their tented earthenware lids, cook it slowly the traditional way at our big open fireplace over the glowing coals of vine roots.
