The Tuscan chef is a private culinary school offering a selection of cooking vacations throughout the year. Courses are hands-on under the guidance of professional Italian chef, Valter Roman and also feature guest chefs from around the world including Alvaro Maccioni of La Famiglia restaurant in London. Courses are fun, informative and full of tips and tricks of the trade. Through hands-on experience discover a table of Tuscan delights on an inspiring culinary journey in and out of the kitchen where you are encouraged to explore the tastes and textures of some of the finest ingredients from fresh home-made pasta and plump potato gnocchi with their various complimenting sauces to truffles, fragrant garden Italian herbs, porcini mushrooms and wild asparagus, freshly pressed olive oil, creamy pecorino cheeses and classic Italian wines.

Kitchen studies are enhanced and complimented by a special touring programme to some of the most enchanting and personally selected towns, markets, vineyards and other hidden treasures of Tuscany.

Six day residential courses are held in a 17th century historic villa surrounded by wild and stunning olive grove terraces reaching out over Monte Pisano with views across lavender and lemon scented Italian gardens towards the enchanting walled town of Lucca. It is a home of great character and charm which has been fully restored to its former glory to become an elegant and exclusive retreat with luxuriously appointed junior suites each with private en-suite bath and shower facilities. Alongside the Tuscan kitchen and grand dining room, the gracious Italian living includes a formal drawing room, guest office with telephone, fax, computer and internet facilities, a library, and a TV lounge with satellite, video, DVD and music system. Outdoors there is an iron-wrought Italian Gazebo overlooking the swimming pool for al fresco dining.

“At Home with the Chef” are small, unique and individually designed cooking courses in the chef’s home; a lovingly restored olive press dating back to the 16th century complete with specially designed open-plan Tuscan kitchen, domed dining room/wine cellar and cosy lounge with fire-place. There are two spacious guestrooms each with en-suite bath/shower-rooms available for weekend and short courses as well as bed and breakfast throughout the year. The gardens extend out towards the gentle olive-terraced hillsides and are surrounded by an ancient fountain and arched stone wall where water once ran along the top to power the wheels of the olive press. There is a rustic gazebo for al fresco dining and a large hammock for lazy afternoons! The olive press is set in a small Italian village nestled into the southern hills of the medieval walled town of Lucca.

SAMPLE ITINERARY
SUNDAY
Transfers from Pisa or Florence airports/train stations for arrival at the villa on the outskirts of Lucca around midday for a welcome buffet lunch prepared by your Italian chef for the week, Valter Roman.
o Buffet lunch - meet your hosts & cooking colleagues with time to settle in and relax before the first hands-on cooking lesson.
o Hands-on cooking lesson with preparation of dinner.
o Welcome aperitivi and orientation before dinner

MONDAY
o Breakfast available
o Join us for a leisurely morning stroll around the ancient walls of Lucca.
o Pasta and its Sauces - a specially themed cooking lesson.
o Lunch alfresco followed by a short guided tour of Pisa & its Leaning Tower.
o Hands-on cooking lesson and preparation of dinner.
o Aperitivi and dinner

TUESDAY
o Breakfast available
o Depart for a Chianti adventure stopping off at an enchanting market town as well as renowned vineyard for wine-tasting and lunch followed by a further vineyard and distillery visit.
o Leave Chianti and return home for an informal pizza supper in the lively village trattoria, just a short walk from the villa.

WEDNESDAY
o Breakfast available.
o Chef’s tour of the bustling market town of Pistoia to choose fresh produce for dinner followed by a kitchen challenge where students and chefs work together to prepare a buffet lunch with items found at the market.
o Lunch followed by free time to relax and enjoy the peace and tranquillity of the villa.
o Hands-on cooking lesson and preparation of a special wine-tasting dinner.
o Introduction to the wines of Tuscany followed by dinner with wine tastings to accompany each course.

THURSDAY
o Breakfast available
o Guided tour through Lucca followed by a specially selected tasting menu for lunch at Valter’s restaurant, The Gazebo at Locanda L’Elisa. After lunch there’s plenty of time to discover Lucca for yourself with great shopping along Via Filungo or to return to the peaceful haven of the villa for an afternoon of relax.
o Hands-on cooking lesson and preparation of dinner.
o Aperitivi and dinner.

FRIDAY
o Breakfast available.
o Hands-on cooking lesson and preparation of lunch.
o Lunch followed by a free afternoon to relax or do some last minute shopping in Lucca.

o Farewell drinks, graduation ceremony and celebration dinner.
SATURDAY
o Breakfast available and transfers to your next onward destination.

6 day residential cooking school which all food & house-wine, cost of pre-arranged restaurants, transfers to/from Pisa and Florence Airports, transport for all arranged outings, guided tours & entrances to museums as arranged, wine tours/tastings, course guide, recipe book, aprons and certificates : 2,400euro p.p. sharing room, 2,700euro p.p. single occupancy.
3 day residential cooking school includes as above : 800euro p.p.
Half day cooking courses (morning or afternoon session) followed by lunch or dinner either “At Home with the Chef” or in the comfort of your own rental home in Lucca : 125euro per person which includes aprons, recipe sheets and all ingredients, followed by a 3 course lunch or dinner with house wine.
