“Xilonen” - The School of Traditional Mexican Cuisine, B&B. Enjoy the most wonderful “Culinary Vacations” on the shores of Lake Chapala. At Xilonen you will find Mexican hospitality by going back to it’s roots in prehispanic history, passing through our Spanish, mestizo, and Spanish American heritages and arriving at Mexican cuisine today (in the 21st century).
Cooking, sight-seeing, entertainment, and relaxation. At Xilonen you will receive the personal attention of the Chef Rose Marie Plaschinski. She will be your guide to the cuisine of Mexico. Our program is designed for 10 participants maximum and includes: transport, round trip to the airport, accommodation for 7 nights. Sight seeing (excursions) and cultural activities, 7 breakfasts, 5 lunches (excluding lunch in Guadalajara and in Tlaquepaque) 6 dinners (excluding the dinner in Ajijic).
The house is a rural building with 5 bedrooms each with a private bathroom decorated in Mexican style. The welcoming living room is the ideal place to feel at ease with the other guests or to quietly watch television. From the terrace you can contemplate the magic of the lake as well as having a rest and enjoying the food. The warmth of the house, the peaceful surroundings and the hospitality of your hostess, no doubt, give the place a friendly and comfortable atmosphere and at the time for a “siesta” there is nothing like a good hammock. While staying at Xilonen the participants can enjoy the delightful pleasures that the state of Jalisco has to offer. Culinary and Cultural expeditions include: The City Of Guadalajara, Tlaquepaque and Tonala, Tequila, The Chapala Riviera, Public Celebrations etc.
Faculty Information:
The Chef Rose Marie offers you 6 classes, 4 hours in each session and with her teaching experience and the demonstration she gives, you will be able to prepare authentic and delicious Mexican dishes. Apart from teaching you will receive traditional techniques in Mexican cuisine. The Chef Rose Marie will take you through the history behind the most typical dishes such as:
* Moles (sauces of ground ingredients made into a pate)
* Salsas (sauces with fresh ingredients)
* Chile (sauces made with chile)
* Antojitos (Mexican snacks)
* Tamales (corndough steamed with a variety of fillings)
* Tortillas, etc. (flat cornbread)
All Classes are given in English but can be given in French or Spanish as required by the participants. Throughout the year we offer courses with different themes and variations in the ingredients depending on the season. In each course we guarantee that you will get to know the most famous delicious dishes of our Mexican cuisine. If there is a special recipe you would like to learn let us know in advance and we will be happy to include it in the program.
Other Activities:
If you want to stay with us for a longer period we can offer you bed and breakfast for an unlimited time we can also organize other activities such as: golf, swimming, tennis, Spanish classes, special cooking classes, organic orchards, yoga, day trips or travel to other part of Mexico.
Facility Information:
Xilonen, (The School of Traditional Mexican Cuisine) is situated an hours drive from the Guadalajara International Airport. Our house/school is located on the shores of lake Chapala. At dawn the reflections of the sun can be seen in the water and in the evening the great sunrise behind the green hills fills the landscape with color day after day. Green gardens, organic orchards full of fruit and vegetables; squirrels, humming bird, eagles, ducks, herons and frogs, in harmony in their natural habitat…
