Our School of Cooking & Catering evolved from Chef Bond's House, Garden's, and Gumbo cooking school that began in 1995. Chef Bond was also an instructor at The New Orleans School of cooking for several years. After years of successful classes and repeat students it was only natural to enlarge his scope of operation by offering a variety of classes and catering.

Upon your arrival, our chef will greet you and your class will begin. Here you’ll start a fun-filled day of continual cooking, learning and eating. During your class you will learn some of the history of New Orleans and food, recipes and cooking techniques. An experience you will remember as a hallmark of your trip!

Our classes are conducted for a minimum of 2 persons and a maximum of 6. However, if 6 people are taking the class at the same time, your day will last much longer than the regular 3 to 4 hours it normally requires for 2 to 4 people and the allocation of your time in New Orleans should be planned accordingly. However, most full day classes run about 3 to 4 hours.

Our classes are popular for those individuals who wish to learn how to cook Cajun and Creole cuisine. Classes begin at 10:00 a.m. and end at 1:00p.m. Wines are served with your meal. The open classes include recipes and generous servings of everything your chef has cooked before you. Take the Canal Street free Ferry to Algiers. We provide free transportation from the landing to your class. How can you miss?

- Party Classes: We will customize your next brunch, lunch, happy hour or dinner for groups of 10 or more and assist you in menu planning and amenity suggestions to fit your group's interests and personality. Our goal is to insure a remembered New Orleans' experience never to be forgotten!

How about cocktails and Hors d`oeuvres and a Cajun and Creole buffet followed by everyone learning to make, flip and flame their own New Orleans desert crepes? Sounds good? We Think so. We can tailor your event to your time restraints and budget. Let us plan with you and help to originate your "designer" gala.

- Hands on Cooking: Imagine yourself a visitor to New Orleans. You stroll through the Quarter or another historic neighborhood and fantasize about the aromas from the houses you pass. You get a glimpse of a private garden from the street, and the romance of the setting is as heady as the scent of sweet olive.

You may eat at one of the world-famous restaurants and wonder, “Do locals prepare food like this?” Now satisfy your curiosity step through the huge doors and enjoy hours of making and eating New Orleans’ cuisine at our kitchen located in the second oldest neighborhood in the city Algiers Point.

Experience the city as one would have experienced it a 100 years ago preparing century-old recipes. Come in and relax. Get acquainted with your classmates and begin to take your fantasy cooking trip back over a century ago. Enjoy cooking your Cajun and Creole menu when you don your aprons and begin a full day of learning and cooking. Each guest is shown professional techniques, the secrets of seasonings and the preparation of selected recipes while learning the history of Louisiana’s world-famous cuisine. Reservations required.

Hands-on classes are available with minimum of two persons. After meeting fellow foodies, we start the class with chopping everything we need for the dishes. Next, we begin making chocolate bread pudding with a white chocolate brandy sauce. Then we do a study in rouxs where you will learn to make a roux 4 different ways. You actually will make a Cajun roux for a gumbo and then a Creole roux for an etouffee. And of course, we eat everything! You will get the recipes at the end of class and soda, beer and wine is served. The cost is $90 per person.

Finally, soft shell crabs, deep-fried, with a tomato and basil Buerre Blanc.
